History 沿革

 

Minzu Nabeyaki Noodle Shop was established in 1963. This is the first traditional Taiwanese style nabeyaki noodle shop in Tainan. Mama Lee is the first owner and creator of the nabeyaki noodle. At first, there was only Nabeyaki Udon, the first kind of nabeyaki noodle, served in the shop. After a few months, Mama Lee created a new kind of nabeyaki noodle, the nabeyaki yi noodle, to provide customers with more choices. Now, the nabeyaki yi noodle has already become the most popular dish in the shop.

 

民族鍋燒老店成立於1963年。這是台南第一家傳統口味的鍋燒麵店。李媽媽是第一代經營者也是鍋燒麵的創始人。一開始只有賣鍋燒大麵,但為了讓口味有更多變化、客人有更多選擇,李媽媽嘗試加入意麵­,而成了現在店裡最受歡迎的鍋燒意麵。

食材介紹 Our ingredients

湯底: 每日使用不同風味的柴魚以特定比例混合熬煮湯底,熬煮時間長達一個上午,湯頭純粹自然甘甜,店內所有湯品(包含酸辣系列)也均使用此柴魚湯底製作。

Soup: Every day, we boil the soup with a certain combination of different bonito flakes the whole morning. It is pure, sweet and natural. We make all the soups (including the hot & sour series) with bonito flakes.

炸蝦: 選用ISO認證養殖白蝦每日手工裹上特製麵衣油炸製成。

Fried shrimp: We use ISO certified white shrimp and make them fresh every day.

炸魚: 選用生魚片等級旗魚片每日手工裹上特製麵衣油炸製成,

Fried fish: We use sashimi-quality swordfish slice and make them fresh every day.

意麵: 採用雞蛋、鴨蛋及麵粉以獨家比例製成,較市面上一般意麵更富香氣及咬勁。

Yi noodles: We use a special combination of chicken egg, duck egg and flour to make the noodles, so they are more savory and chewy than the yi noodles on the market.

魷魚: 堅持採用口感爽脆有嚼勁,但產量逐年遞減的阿根廷魷魚,搭配獨家調製醬料,是本店最受歡迎的必點小菜。

Squid: We insist on using the crispy and chewy Argentina Squid despite its decreasing production. With our homemade special sauce, it is the most popular appetizer in the shop.

紅茶: 只用砂糖加入熬煮的古早味仙女紅茶,為保持濃郁香氣,採降溫後冷藏工序,不加任何冰塊,搭配鮮奶更有一番風味。

Black tea: We only add granulated sugar to the traditional Formosa black tea. To retain its fragrance, we let it cool down before refrigeration instead of adding ice. With milk, it has another unique taste.
