阿霞飯店 創立於1940年

 

一位國小剛畢業的女孩子,為了負擔家計開始跟著父親擺路邊攤,販賣著最台灣味的點心,香腸熟肉、蟳丸、蝦捲、滷大腸頭,還有讓人回味再三的紅蟳米糕、炒鱔魚、花鮡魚湯與烏魚子,如蔣經國總統、李登輝、陳水扁、連戰、馬英九總統、諾貝爾文學獎高行健、奧斯卡最佳導演李安、旅日名人金美齡等人,更是長年的座上賓,台灣與日本美食節目專訪,與國際美食家蔡瀾的相知相惜,年年都會來此一嚐台灣料理的精髓。  

由吳錦霞女士所創辦,從成功路興濟宮(大道公廟)起家的古早物料理,陸續搬遷到忠義路上的舊市場(現址國花大樓)、福樂蛋糕現址,於民國七十二年正式落腳天公廟前,由台南名人吳三連親筆題字店名。

第二代與第三代接手後,於民國九十五年間將陳舊的店面保留原貌下加以裝潢求新,提升服務與用餐氣氛,製作紀錄片、烏魚子文宣、台菜典故等資料,希望有更多年輕朋友懂得吃台菜,繼續原汁原味地傳承這七十年正宗台菜滋味。

 

A-SHA Restaurant—since 1940

 

More than sixty years ago, Wu Jin-xia, a girl who just graduated from primary school began to help her father at a food stand, selling local snacks such as sausages, crab meat balls, shrimp rolls, marinated pork intestine, crab rice cake, stir-fried eel, mudskipper soup and mullet roe. President Chiang Ching-Kuo, Lee Teng-hui, Chen Shui-bian, Lien Chan, President Ma Ying-jeou, Nobel laureate in literature Gao Xingjian, Oscar best director winner Ang Lee, and Chin Mei-ling, Taiwanese celebrity living in Japan, are all distinguished guests of this restaurant. Taiwanese and Japanese food programs have interviewed her, and gourmet Chua Lam is her friend. Chua Lam comes here every year to taste the essence of Taiwanese food.

 

This traditional food restaurant, opened by Wu Jin-xia, started at Cheng-gong Road Sing-ji Temple, moved to the old market on Jhong-yi Road (now the Guo-hua building) and what is now Fu-le Cake Shop, and then finally settled down near Tiangong Temple in 1983. Tainan celebrity Wu San-lian inscribed the restaurant’s name himself.

 

Now A-SHA Restaurant has been passed on to the second and third generation. In 2006, it was refurbished without changing the overall look to improve its service and create a better dining atmosphere. Documentaries were made, and mullet roe flyers and stories about the origins of Taiwanese food were provided. This generation has also inherited the traditional taste of local Taiwanese food, which has lasted for more than 70 years.

蝦棗 介紹 Shrimp Nuggets

 

台南蝦捲,使用上選火燒蝦、絞肉、蒜末等多種食材以『網紗』手工包裹成條狀、入鍋前切成塊狀、起鍋後有如棗子狀,取其諧音『蝦棗』。

 

Tainan shrimp roll is made of selected whiskered velvet shrimp, ground meat and garlic, etc. The ingredients are wrapped in “mesh” and rolled into a bar. The bar is cut into pieces before being cooked, and the pieces look like nuggets after being cooked, so the dish is named “Shrimp Nuggets”

粉腸 介紹 Fenchang Sausage

 

南部特有水煮香腸,以天然紅麴調味,本草綱目中記載紅麴具有活血,健脾、益氣、溫中的功效,純手工灌製,味道獨特且健康水煮不增加身體負擔,以本店自製醬油膏沾製,堪稱一絕。

The special boiled sausage in Southern Taiwan is flavored with natural red yeast rice. The Compendium of Materia Medica indicates that red yeast rice can promote blood circulation, invigorate the spleen, replenish Qi and warm the body. It is completely handmade, with a unique taste. It is also boiled, so it is not a burden to the human body. With the thick soy sauce made by our restaurant, it is surely a delight for the taste buds.

提起白蓮霧,臺南新市人都會自豪讚賞一番,白蓮霧翠綠,甘甜、風味絕佳,是臺灣水果極品。新市有句俗諺,『透早天打霧,鳥鶖騎水牛,順序提茄薯,後宅撿蓮霧』,用以形容新市白蓮霧的隨處可見,只是後來隨著社會演進而式微,直到近年來地方政府投入白蓮霧的復育工作,逐漸顯現成效。

精選白蓮霧熟葉、甘草、絞股藍製成,味略甘、聞蓮霧淡雅清香。

Tea

The white wax apple, the pride of Tainan Sin-shih and one of the top fruits in Taiwan, is bright green, sweet and delicious. There is a proverb in Sin-shih, “In the foggy morning, the black drongo sits on the water buffalo’s back, while we pick tomatoes and potatoes, and wax apples behind the house.” This indicates that white wax apples can be seen everywhere in Sin-shih. Though its production has decreased over the years, recently the local government has been working on restoration.

The tea is made from white wax apple leaves, Chinese liquorice and jiaogulan. It is sweet with a faint smell of wax apple.
